I just found this recipe in a family cookbook. This is from my dear Grandmother Martha Ann Darley. I remember eating this at her home.
10 medium sized potatoes
2 cans cream of chicken soup
1 cube margarine
1 pt. sour cream
1/3 c. green onions, chopped
1 1/2 c. grated cheese
3 handfuls of corn flakes, crumbled
3 tbsp. melted margarine
Boil potatoes until you can insert a fork easily. Do not overcook (boil). Drain potatoes and cool. Mix soup and margarine until melted. Add chopped green onions; add sour cream and mix well. Add this mixture to grated potatoes and put into baking dish. Top with cheese. Mix melted margarine with corn flakes until crumbly. Spread over potatoes and bake at 325 degrees for 25 to 30 minutes.
