Great for A Cold Winter Day - White Chili

My friend Tina sent me this recipe. It is really good, my children even love it.

WHITE CHILI
3 cans Northern White Beans(You will find this next to the kidney beans)
4 cups chopped, cooked chicken breasts (tip: buy a Rotisserie Chicken from Costco)
1 TBS. olive oil
2 medium onions, chopped
4 garlic cloves, minced
2 4-ounce cans chopped mild green chilies (tip: canned whole chilies come without skin. Chop them up and put extra in the freezer)
2 tsp. ground cumin
1 ½ tsp. dried oregano, crumbled
¼ tsp. cayenne pepper
6 cups chicken stock or canned broth
3 cups grated Monterey Jack cheese (about 12 oz)
Sour cream

Simplified directions:Heat oil in heavy large pot over medium-high heat. Add onions and sauté until translucent, about 10 minutes. Stir in garlic, then chilies, cumin, oregano, and cayenne and sauté 2 minutes. Add 3 cans of Northern White Beans and stock and bring to boil. Reduce heat and simmer uncovered for 30-45 minutes.Take the meat off of a rotisserie chicken. Use 4 cups chopped of the meat (about ½ of the chicken). Add chicken and 1 cup cheese to chili and stir until cheese melts. Season to taste with salt and pepper. Ladle chili into bowls. Serve with remaining cheese and sour cream.
