Chicken Cordon Bleu

4 chicken breasts (boneless and skinless)
Salt and Pepper
8 thin slices of deli ham
16 thin slices of swiss cheese
2 tsp thyme
¼ cup flour
1 cup bread crumbs
1 tsp olive oil
2 eggs
2 tsp water

Preheat oven to 350 degrees. Lay chicken in plastic wrap and pound flat until ¼ inch thick. Lay two slices of cheese followed by 2 slices of ham then two more slices of cheese. Wrap chicken over it and secure with a toothpick. Season the flour with salt and pepper and put on a plate. Mix bread crumbs with thyme and use salt pepper and oil. Beat together eggs and water. Lightly dust the chicken with flour and dip in egg mixture then gently coat in the bread crumbs. Bake 20 minutes or until cooked through.

1 tbsp butter
1 tbsp flour
1 cup milk
1/3 cup parmasean cheese
½ tsp garlic powder
Salt and pepper

In a small sauce pan melt butter. With a whisk beat in flour. When mixture bubbles add milk all at once and stir to avoid lumps. Stir in cheese, garlic powder and salt and pepper and stir until thick. Pour with zigzag on chicken or serve on the side.
