2 egg whites
1/3 cup sugar
4 tbsp melted butter - cooled
½ cup flour
¼ tsp salt
½ tsp vanilla
¼ tsp lemon juice
Preheat oven to 350. Whip egg whites on low speed until light and foamy. Blend in the sugar. Continue to beat until soft peaks form. Pour in melted butter, flour, salt and vanilla and lemon juice. Drop tablespoon on pan and make 3 inch rounds. Bake for 5-8 minutes until edges golden brown. Only bake 3 at a time! Remove cookie and lay in fortune. Fold in half and make a crescent. When it cools it will harden.

I dipped store bought fortune cookies in chocolate for Valentine's this year. Next year I'll have to try homemade ones! By the way, dipped fortune cookies are so much better than plain ones!!
